Sweet Basil Pesto

Ingredients

  • 2 cups fresh basil leaves, washed and dried

  • ½ cup lightly salted almonds (or any nut you prefer in your pesto)

  • 2 Tablespoons fresh lemon juice

  • 1 garlic clove 

  • ¼ teaspoon salt

  • 1 cup olive oil

  • 1 Tablespoon honey

  • ¼ cup shredded parmesan cheese

  • Freshly ground black pepper to taste

Directions

  • Add lemon juice, nuts, garlic, salt, and pepper to your food processor. Cover and pulse until combined.

  • Add basil, honey, and parmesan. Cover and pulse until combined.

  • Give everything a good stir and cover. Slowly add in olive oil while running the food processor until everything is well combined and the consistency you like.

  • This recipe freezes well. I recommend freezing in ice cube trays and transferring cubes to a ziploc bag.
