Heirloom Tomato Marinara

Ingredients

  • 8 pounds mixed tomatoes of any variety- heirlooms, romas, or slicers cut into large pieces

  • 1 white onion, quartered

  • 1 head of garlic, peeled

  • 1 cup of tightly packed basil, washed

  • 2 Tablespoons dried oregano

  • 1 Tablespoon dried basil

  • 2 Tablespoons sea salt

  • 1 teaspoon black pepper

  • 1/3 cup olive oil

  • 1/2 cup dry red wine

Directions

  • In a large dutch oven, heat olive oil over medium-high heat

  • Add all ingredients and cook uncovered for around 3 hours, stirring every 30 minutes

  • Cool to room temperature and blend in batches

  • This recipe freezes well and will last up to 6 months in the freezer
