Taco Sauce

Ingredients:

  • 4 cups roughly chopped cherry tomatoes, stems removed (it’s fine to do a quick chop, you just want to get an accurate measurement of 4 full cups of tomatoes with no air pockets).

  • 1 cup diced onions

  • 1/3 cup tightly packed chopped cilantro

  • 5 cloves of roughly chopped garlic

  • 6 fresh Serrano peppers (or whatever spicy peppers you have)

  • 3/4 cup apple cider vinegar

  • 1/4 cup fresh lime juice

  • 4 tsp sea salt

Directions:

  • Combine all the ingredients in a big, heavy-bottomed pot.  

  • Cook on medium heat for about 20 minutes, until everything is simmering and tender.  

  • Puree with an immersion blender (or whatever you use to puree) to your desired consistency.

  • Cook for another 20 minutes on medium heat, stirring occasionally until it’s slightly thickened.
